  • 50 g (1/4 cup) sugar
  • 200 g (1 cup) sugar
  • 40 ml cherry juice
  • 60 ml (1/4 cup) apple juice
  • 150 g sour cherries (fresh or frozen)
  • 140 g (2/3 cup) butter
  • 65 g (1/2 cup + 2 tbsp) unsweetened cocoa powder
  • Pinch of salt
  • 1 tsp vanilla extract
  • 2 large eggs
  • 70 g (1/2 cup + 1 tbsp) flour

Instructions

  1. Prepare the cherry sauce by caramelizing sugar in a medium saucepan over medium-high heat without stirring. Once caramelized, add cherry juice and apple juice, bring to a boil, then simmer for about 5 minutes until reduced.
  2. Add the sour cherries to the hot sauce, simmer for another 2 minutes, then let steep off heat for about 2 hours.
  3. Preheat your oven to 180°C (350°F). Line a baking pan (20 x 20 cm) with baking paper.
  4. In a mixing bowl over a hot water bath, melt butter, sugar, cocoa powder, and salt together until combined. Let cool slightly.
  5. Stir in vanilla extract and add eggs one at a time, mixing vigorously after each addition.
  6. Fold in flour gently until just combined. Pour batter into prepared pan and smooth the top.
  7. Press cherries into the batter and bake for about 20 to 25 minutes or until a toothpick comes out with a few moist crumbs attached.
